About the Role
An exceptional opportunity for an experienced and passionate Sommelier to join a distinguished hospitality group in Hong Kong. Reporting directly to the Director of Operations, this role carries full ownership of the wine programme across multiple venues, combining deep product expertise with commercial responsibility. The ideal candidate will bring extensive knowledge of fine wines, a strong understanding of Hong Kong's local wine market, and a proven track record in high-end hospitality environments. This is a position for someone who thrives in a fast-paced, multi-outlet operation and can elevate both the guest experience and the team's wine knowledge to the highest standard. This position is only open to candidates currently based in Hong Kong with proven local industry experience.
Key Responsibilities
- Curate and manage the wine programme across multiple venues, ensuring consistency, quality, and alignment with each outlet's identity and guest expectations. Oversee the wine cellar operations in their entirety, including meticulous inventory control, stock rotation, storage conditions, and supplier relations. Develop and maintain strong, productive relationships with local wine suppliers and distributors, negotiating favourable terms and staying ahead of market availability. Organise and host wine dinners, tastings, and other wine-focused events that engage guests and reinforce the group's reputation for excellence. Train and educate service staff across all outlets, raising the team's collective wine knowledge and elevating service standards on the floor. Stay abreast of current wine trends, emerging regions, and new vintages, recommending timely updates and seasonal adjustments to the wine list. Collaborate closely with culinary and operations teams to develop thoughtful wine pairings that complement menus and enhance the overall dining experience.
Requirements
- Minimum WSET Level 3 Award in Wines or a higher professional certification. At least 3 years of dedicated sommelier experience within luxury hotels or fine-dining restaurants in Hong Kong. Proven experience working across multiple outlets in high-end, high-volume hospitality environments. A strong professional network and thorough knowledge of local wine suppliers, distributors, and market trends. Excellent organisational and communication skills, combined with a genuinely guest-focused approach to service. Ability to start immediately. Candidates must be currently based in Hong Kong with demonstrable local industry experience.
